Looking for chocolate chip cookie sandwiches? Well, you've come to the right place. The first is a classic cookie recipe and then we're adding several variations if you are the more adventurous sandwich cookie aficionado that I think you are.

Cook Time: 5 minutes
Serving size: 1 large or 2 medium sandwich cookies
Ingredients:
4 large chocolate chip cookies or 8 medium (store brand or homemade)
2 - 4 Tablespoons peanut butter (creamy or crunchy)
2 scoops ice cream (optional)
Directions:
1. Preheat oven to 350 degrees. Place cookies on an oven safe pan and heat for 5 minutes.
2. Spread peanut butter on bottom half of one cookie and top with other cookie. Repeat with other cookies, making 2 large or 4 medium sandwich cookies.
3. If serving with ice cream, place 1 scoop in each serving bowl. Place 1 large or 2 medium cookies on the side of each scoop.
4. Serve immediately or freeze for firmer texture.
Variations: Squeeze chocolate syrup over ice cream and cookie. If cookies don't have nuts, sprinkle a few chopped peanuts, walnuts, or pecans, over ice cream and chocolate syrup. Top with whipped cream.

1. Spread Fillings: Spread 1 tablespoon of peanut butter on one cookie and 1 tablespoon of chocolate hazelnut spread on another cookie.
2. Assemble Sandwich: Press the two cookies together, filling side inwards, to form a sandwich.
3. Repeat and Serve: Repeat with the remaining cookies. Enjoy!

2. Top and Serve: Place another cookie on top, flat side down, to form a sandwich. Serve immediately or freeze for a firmer texture.

1. Spread Nut Butter: Spread 1 tablespoon of almond or cashew butter on the flat side of each cookie.
2. Add Banana Slices: Place a few banana slices on top of the nut butter on 4 of the cookies.
3. Assemble Sandwich: Place the remaining 4 cookies on top, flat side down, to form a sandwich. Serve immediately.

1. Spread Ganache: Spread 1 tablespoon of chocolate ganache or frosting on the flat side of each cookie.
2. Assemble Sandwich: Place another cookie on top, flat side down, to form a sandwich. Serve immediately.

1. Spread Marshmallow: Spread 1 tablespoon of marshmallow fluff on the flat side of each cookie. If using marshmallows, melt them slightly before spreading.
2. Add Chocolate: Place a square of chocolate or a spoonful of chocolate spread on top of the marshmallow fluff.
3. Assemble Sandwich: Place another cookie on top, flat side down, to form a sandwich. Serve immediately or freeze for a firmer texture.
Mint Chocolate Chip Cookie Sandwich

1. Assemble Sandwich: Place a scoop of mint chocolate chip ice cream on the flat side of one cookie.
2. Top and Serve: Place another cookie on top, flat side down, to form a sandwich. Roll the edges in crushed peppermint candies if desired. Serve immediately or freeze for a firmer texture.
Nutella and Banana Cookie Sandwich

1. Spread Nutella: Spread 1 tablespoon of Nutella on the flat side of each cookie.
2. Add Banana Slices: Place a few banana slices on top of the Nutella on 4 of the cookies.
3. Assemble Sandwich: Place the remaining 4 cookies on top, flat side down, to form a sandwich. Serve immediately.
Peanut Butter and Jelly Cookie Sandwich

1. Spread Fillings: Spread 1 tablespoon of peanut butter on one cookie and 1 tablespoon of jelly or jam on another cookie.
2. Assemble Sandwich: Press the two cookies together, filling side inwards, to form a sandwich.
3. Repeat and Serve: Repeat with the remaining cookies. Enjoy!
Coconut Chocolate Chip Cookie Sandwich

1. Spread Coconut Cream: Spread 1 tablespoon of coconut cream or coconut frosting on the flat side of each cookie.
2. Assemble Sandwich: Place another cookie on top, flat side down, to form a sandwich. Roll the edges in shredded coconut if desired. Serve immediately or freeze for a firmer texture.
Salted Caramel Chocolate Chip Cookie Sandwich

1. Spread Caramel Sauce: Spread 1 tablespoon of salted caramel sauce on the flat side of each cookie.
2. Assemble Sandwich: Place another cookie on top, flat side down, to form a sandwich. Sprinkle with sea salt if desired. Serve immediately or freeze for a firmer texture.
