Chicken Sandwich Spread
(or Chicken Apple Sandwich Spread to be exact...)
My usual Chicken Sandwich Spread recipe is to mix cut up chicken, pickle relish, mayonnaise, and a little onion powder and garlic powder together. It's quick and easy but kind of un-exciting, huh? I agree.

The recipe I found below adds a little excitement to an ordinary recipe. I'd say apples AND cashews are pretty exciting, don't you think? Well I do, and a few other people do to.

Chicken Apple Sandwich Spread
This is a delightful sandwich spread. You will like the apples and cashews. Prep time does not include cooking the chicken.

6 -8 sandwiches
* 2 cups shredded or chopped cooked chicken
* 1/2 cup chopped apple
* 1/2 cup chopped cucumber
* 1/2 cup chopped cashews
* 1/4 cup mayonnaise
* 1/2 teaspoon sugar
* 1/4 teaspoon onion powder
* 1/4 teaspoon salt
* 1 dash pepper
1. In a medium bowl, combine the chicken, apple, cucumber and cashews.
2. In another bowl, mix together the mayonnaise, sugar, onion powder, salt and pepper; mix well.
3. Add to the chicken mixture and mix well.
4. NOTE: Should be prepared the day of the party because of the apples and mayonnaise.
