Cauliflower Toastie



How do you make a Cauliflower Toastie? With a toastie maker of course! A toastie maker is also known as a sandwich or snack, makers among other terms. I finding it hard to find recipes for sandwich makers, so whenever I come across one, I will add it.

If you don't have one of these handy little appliances, just spread the filling on buttered toast. So here's the recipe:


    1 cup cauliflower, steamed
    1-2 T mayonnaise
    1/4 tsp Dijon mustard (optional)
    1/4 tsp sea salt, seasoned salt, or salt-free seasoning
    1 tsp celery or water chestnuts, chopped (optional)
    2 slices whole-grain bread
    1 T butter
    1/2 cup lettuce, shredded


    Mash cauliflower, mixing in mayonnaise, mustard, and sea salt. Add celery or water chestnuts, and mix well. Butter bread. Spread cauliflower mixture on unbuttered side of one slice of bread. Sprinkle with lettuce and carrots. Cover with second slice of bread, buttered side facing out. Place sandwich in toastie maker or sandwich maker. Cook according to directions. Serves 1.

I really need to get one of those snack makers. I'm sure with a little bit of creativity, anyone could come up with a number of recipes for breakfast, lunch, and dinner – and maybe even dessert!
